EVO has a faster microcontroller, faster WiFi (which make it quicker/even more responsive) and a USB C charging connector (charge from any USB power supply, and as fast as it can from a 15 W USB power supply).
All this makes it more modern, and even more future-proof, but in flight, honestly, you won't really notice any difference.
It's like iPhone 12 vs. 14, same look and feel, both don't feel laggy or anything, but 14 has a quicker processor and some other new gadgets.
Again, from my experience, the latest is a nice-to-have, but in day-to-day use, not many will notice the difference.
Bottom line, if you want the latest, buy EVO, even if you already have Touch.
But you won't feel left behind if you stay with your Touch, and you won't fly any slower
