Hi,
I find it well to start with 65 % throttle or thereabouts, at battery full (4.2 V/cell, unloaded).
This provides enough headroom until battery empty (3.5 or less V/cell, under load).
But the 3D cracks particularly in the U.S. or in Asia seem to go way higher, so they almost always run 100 % throttle opening at high / demanding loads (or all the time, no governor required, just an on-off-switch
).
Better for the ESC, it remains cooler if there are less switching losses, particularly under high load.
Drawback, you have to live with rpm drops when the battery voltage dropping.
Then, you often see the the routines also become less demanding
