Please split your "old style plank flyer thoughts" from degrees/deflections and flight behaviour. We have a control loop which is controlled by stick as input (target rate) and will set the required deflection to get this rate by itself in flight. Consider also a control loop needs some reserve throw to control the rate. So - setting up angles by the books here will limit the control loop too.
So the Throw setup is - set up the complete available throw in general in the model setup and then work with the agility and other control loop parameters in each bank.
Sidenote: Changing from flybars to FBL we had the similar change to do in the heli pilots heads too ages ago ...
